We love making this soup when we want something light and healthy in the fall or winter. And, admittedly, when we’re feeling lazy and want to whip up dinner in 20 minutes or so. Virtually everything in this soup is optional or ‘to your taste’ except the broth. The soup can be vegetarian or meat based.
OMG! These crispy oven-roasted potatoes are so good! We probably said that before once or twice, but it’s really true. How are they different from the usual roasted potatoes you ask? The cooking method is different – you boil and rough up the potatoes first, then add butter and oil (we really recommend using butter, but just oil is good too), then roast the potatoes at very high heat. Yes, they take a bit longer, but are well worth the extra time. Fluffy inside, crispy outside. We can assure you, there will be no leftovers. Vegetarian.
Vegetarian pea soup – thick and flavourful – pure comfort food in our home. Very satisfying, very filling, very healthy. We serve it as a main weeknight meal from time to time along with some crusty bread and butter. Yum! Vegetarian. Make ahead.
If you have ever made risotto before, you know that it can be pretty labour intensive. Standing over a hot pan stirring away, carefully adding your liquid in intervals, can have you spending too much time away from your guests instead playing host and joining in the fun. Well thanks to our good friend Mike (aka @omgchampagne), you no longer have to tediously stand by as your risotto cooks. This crock pot pumpkin risotto is a treat. It’s a creamy and rich even though it contains no dairy. And it’s so easy to make. Vegetarian.
If you’re looking for a great chicken dish for your next dinner party or family event, this company chicken with citrus, carrots, prunes and pistachios is a great choice. It boasts oranges and lemons for zest, honey and prunes for sweetness, grainy mustard, garlic, onion and thyme for depth and chili flakes for a kick of heat. Add a little crunch and colour from pistachios, carrots and parsley – and you get an earthy, complex and beautiful dish that is certainly company-worthy. Make ahead.
This Creamed Spinach version is a wonderfully nutritious side dish for, well, just about anything. It can be made as light as you want (we use mostly skim milk) or rich and decadent with heavy cream. You can vary the flavour profile by adding garlic, onion, nutmeg and/or Parmesan cheese. Vegetarian. Make ahead.
Food for the soul, this one skillet chicken and vegetables recipe goes way back, over 30 years at least. I used to call it smothered chicken. It’s one of my favourite comfort foods and is delicious served with noodles, mashed potatoes or rice. It shares similar tastes to a chicken stew or fricassee, but contains no dairy. Make ahead.
Vegetarian Sweet Potato Hash has major points in our book: It’s very versatile – it can be used as a side dish, filling for a wrap, breakfast item or even as a main dish with, say, some eggs or tofu on top. Or you can add other favourite ingredients like chopped mushrooms or celery; It takes about 20 minutes to make; It only uses one pan; It’s healthy; It’s vegetarian (a must for kook Jenna), although meat eaters can add some crumbled cooked crispy bacon or sausage at the end; It’s forgiving – exact amounts aren’t important; it’s beautiful on the plate with deep orange, red and green colours; It can be made-ahead and reheated the next day; and mostly importantly, it tastes great! Vegetarian. Make ahead.
Homemade chunky applesauce – another yummy Fall comfort food. We often set it up to cook while we’re making dinner, then hope that we have leftovers. We serve it as a side for chicken, pork or french toast and, of course, for a healthy snack or dessert. Vegetarian. Make ahead.
What can be more tempting for Fall than a moist, tender cake full of apples and drizzled with a silky smooth decadent sauce? Apple Cake with Caramel-Bourbon Sauce, that’s what. This cake is always popular at dinner parties and potlucks. Vegetarian. Make ahead.
