Are you regularly asked to contribute a dish to family or friend get-togethers? WHAT TO BRING? WHAT TO BRING? Here’s a list of (and links to) a few of our favourite easy potluck recipes that take 30 minutes or less to make and can successfully be made ahead and transported. Many can be served at room temperature. Others may just need a quick warm up in the microwave. All are crowd-pleasing and most are vegetarian-friendly.
Grilled Vegetables – Simple grilled vegetables is a great way to go for potluck. Our favourites are peppers, eggplant, zucchini, red onion and asparagus. We like to baste them with Catalina (french) salad dressing and sprinkle them with some oregano before grilling. Add some mango or peaches to the platter if you have them around. Serve room temperature or warm. Vegetarian.
Grilled Peaches – So easy, so delicious and very impressive. Our favourite side during summer peach season. And they take only a few minutes to make. Serve room temperature or warm. Vegetarian.
Herb Lemon Potato Salad. This potato salad is a nice change from the mayo kind. It’s light and bursting with flavour from the lemon zest and herbs. Serve at room temperature. Vegetarian.
Thai Quinoa Salad – This salad is healthy, loaded with veggies, has great flavour and is perfect for a buffet table. Serve room temperature. Vegetarian.
Creamed Spinach – This is a super-quick comfort food side dish that goes really well with fish, meat or chicken. It’s easily warmed in the microwave in the host’s kitchen. Or, if made for a large crowd, bring it in a crock pot to keep warm. Vegetarian.
Grilled Vegetable Orzo – This dish is definitely a family favourite of ours. It’s completely adaptable to the types of vegetables and herbs you want to use. It can easily be made a day ahead then brought to room temperature before serving. Vegetarian.
Skor-Chocolate Chip Cookies – These cookies can be made way ahead by forming them into small balls, flash freezing them, then putting the frozen dough in a sealed bag in the freezer. Ready for baking whenever you need them. Delicious. We like them crisp. Vegetarian.
Luscious Fruit Salad – This dessert is a nice change from the tried-and-true berry bowl and presents beautifully with its gorgeous blend of colours from mango, papaya and kiwi. Bring the freshly squeezed orange juice separately and add it just before serving at the host’s home. So refreshing. Also great as an appetizer served in mini plastic cups. Vegetarian.
8-minute Fudgy Brownies – If you’re short on time and still want to bring something homemade, here’s your answer. Don’t forget to bring the ice cream (and fudge sauce if you like). Vegetarian.
Crispy Buttery Lace Cookies These delicate cookies are a terrific addition to a dessert table for a tea, shower, brunch or buffet. And they take only 22 minutes to make. Vegetarian.
