I have to admit that as Fall nears, I am starting to crave some comfort food. At the same time I wanted to take advantage of the late summer peppers, so I put together this lighter comfort dish of Chicken with Onions and Peppers. The recipe is made in one skillet and can be made within 30 minutes which is always good in my book.
I’m not a fan of frying so I am thinking that in the next version, I could probably grill the chicken lightly instead of frying it. I am a fan of sauces. There should be plenty of sauce to coat the chicken and soak into the rice or mashed potatoes that I suggest you serve it with. Yum.
I’m not going to lie. I prefer boneless thighs which I have tried and love in this dish, but I was going for lighter and I know more people prefer white meat. If you’re like me, feel free to substitute. Even better with bone-in in my view.
