I love the combination of bold colours, sweet spicy sauce, juicy ripe mango and fresh vegetables in this Vegetable Mango Stir Fry with Grilled Chicken dish. It’s a healthy, yummy meal for the weekday rotation. The preparation of chopping vegetables, grilling the chicken and making the sauce can all be done ahead of time if you prefer. The actual stir fry and combining the final dish only takes about 8 minutes.
Use any vegetables you like or have on hand, keeping in mind that some cook more quickly than others e.g. snow peas, zucchini, etc. The mangos add an exotic rich texture that balances the spicy sweet sauce. If mangos are not in season, I’ve also used fresh orange or tangerine or pineapple chunks.
If you don’t want to grill the chicken, you can saute it instead. Just cut it into 1 1/2 to 2 inch pieces and toss it in a bag to coat with 6 tablespoons cornstarch, 1 1/2 teaspoons salt and 1/2 teaspoons pepper. Then fry until golden brown in 2 tablespoons oil and set aside.
Needless to say, this dish can be made VEGETARIAN by eliminating the chicken altogether. You can also swap beef or pork for the chicken. Enjoy!
Make it Vegetarian
- Eliminate the chicken. substitute with tofu if desired
Change it up
