If you have read some of our other posts, you may have noticed that the colours in the dishes – and the menu – are really important to us. We are both very visual cooks – ahem, kooks. This warm black rice salad is visually stunning – at least we think so. The contrast of the orange mango, red tomatoes and green onions against the backdrop of the deep purple rice (black rice that’s cooked) is just so pretty.
So does it taste good you might be asking? Yes it does. The black rice has a nutty flavour and the sweetness of the mango with the slight tang of the vinaigrette makes for a nice combination of flavours. And textures too. The rice maintains a bit of a ‘bite’ which contrasts well with the silky smooth mango.
We learned that black rice – often referred to as Forbidden Rice – is very healthy – a nice bonus. It is high in protein, fibre and iron. When cooked, the short grain version has a saucier texture than regular white or brown rice.
If you want to take a short cut, you can drizzle on your favourite vinaigrette out of the bottle. You can also substitute the mango with peaches or papaya. Pears would also taste great but they don’t add that beautiful colour. Come to think of it, kiwi would be a great addition too.
One note for serving: if you’re serving to guests at a dinner party, we like to leave all the garnishes on top for effect because once you toss everything together, the mango turns purple. Just a thought…
