Baked Brie and Preserves (Easy Appetizer Recipe)

Level up your next gathering with a delicious crowd-pleasing baked brie and preserves appetizer. Guests will love the rich and indulgent cheese - oozy and creamy when baked - paired with a sweet jam and crunchy pistachios.

Ingredients

  • 550 gram (19.2 ounces) Brie cheese round/wheel, Note 1 (or Camembert cheese)
  • 2/3 cup preserves, Note 2
  • 1/2 cup nuts, roughly chopped, Note 3 (I use pistachios)

Instructions

  • HEAT OVEN TO 375F/190C.
  • PREPARE BRIE: Unwrap brie wheel and place on oven-proof shall dish or skillet. If you don't have one, place on crumpled parchment paper on a baking sheet (make parchment a bit larger than the brie for easy transfer). Score the top of the rind on brie a few times to allow jam to seep in a bit. Spread preserves/jam on top of brie rind. Sprinkle nuts on top (and around brie if you have extra).
  • BAKE & SERVE: Bake brie for 15-20 minutes, just until the cheese is soft and melty. Don't overbake it or it will get rubbery in the middle or lose its shape. If using a small brie, bake for 10 minutes. Microwave option Note 4. Check by piercing with a tester - if gooey, it's done. Or brie will feel soft to the touch. Serve with your choice of crackers or fresh fruit, Note 5. If you baked brie on parchment, transfer it with the parchment to a serving tray.

Notes

  1. Brie:
    • Baking time will depend on size of brie. An 8 ounce/250 gram brie will take about 10 minutes and serve 6-8 people. A 19.4 ounce/550 gram brie will take 15-20 minutes and serve 18-20 people (approximately 1 ounce servings).
    • Camembert can be substituted - it's a bit stronger and earthier.
    • The rind is edible and helps maintain structure when baking. You can cut off the top rind if you prefer (freeze the brie for 20 minutes to make it easier to cut off). 
  2. Preserves options: Any flavor of jam, preserves or jelly will work. Try mixed berry, fig, strawberry, raspberry, apricot, pepper jelly, etc. 
  3. Nuts: Pistachios, walnuts, pecans, macadamia nuts, almonds and cashews are all good choices. 
  4. Microwave shortcut: Instead of baking, microwave brie for 1 minute and then in 30-second intervals until melty. This is a great option for reheating the brie to soften it up again (it stays gooey for about 15 minutes).
  5. What to serve with baked brie: crispy plain crackers, crostini, breadsticks, baguette slices, apple or firm pear slices, sticks of celery or red pepper, grapes on the side. 
  6. Other topping combinations: See the post above for 10 other delicious toppings. Or keep it super simple by baking the brie plain and then drizzling on honey or balsamic glaze. 
  7. Make ahead:
    • You can prep the brie a few hours ahead. Bake it just before serving.
    • Store leftovers in an airtight container for up to 2-3 days. Rewarm it in the oven for 10 minutes or microwave for 1-2 minutes. It might look messy, but the mixed-up ingredients will still be delicious.
    • I don't suggest freezing the baked brie with toppings.
